If you can, soak the porridge with 1 cup water in the fridge overnight. This will make your morning simpler and help make the oats easier to digest. Otherwise, put the oats and 1 cup water into a saucepan and soak for a few minutes until water is mostly absorbed. Add 1 cup water and on medium heat bring to boil. Once water is absorbed, reduce to simmer and add 1 cup milk, gently stirring. Take it off the heat and spoon it into deep bowls. Top with a dollop of almond butter, some apple pieces and a handful of your delicious wintry nordic sprinkle.
2 tbsp pepita
2 tbsp sunflower seeds
1 tbsp hemp seeds
1 tbsp chia seeds
1tsp ground cinnamon
a pinch of freshly grated nutmeg
a pinch of freshly grated ginger
a pinch of cardamom
Combine ingredients and place in a small saucepan on low heat for a few minutes to release the flavours and oils. Once you smell those spices you can take off the heat and pour into a jar. Store the remainder in an airtight container or jar in your fridge for tomorrow's smoothie.
