Makes roughly 8 cookies

Fig and Salted Maple Cookies
Feat. Salted Maple Muesli

Whole food Plant Based, Dairy Free, Soy Free & Refined Sugar Free

Ingredients
  • 1 cup Oat Flour (wheat free)
  • 1 cup Salted Maple Muesli
  • 1/2 cup Pure Maple Syrup
  • 1/2 cup Almond Butter
  • 1/4 cup chopped Dried Figs
  • 1 1/2 tbsp ground Flaxseed
  • 1 tsp Vanilla Extract
  • 1/2 tsp Salt (we like Murray river flake salt)

Extra 1 tsp Salt & 1/4 cup Plant Based caramel chocolate melted for drizzling on cookies after cool

Method
  1. Preheat oven to 180 degrees celsius, line a baking tray with baking paper
  2. Combine all ingredients in a large bowl, mix thoroughly until it all comes together in a dough
  3. Form balls from 2tbsp of dough
  4. Press flat onto tray
  5. Bake for 12-14 minutes
  6. Cool completely on tray
  7. Melt 1/4 cup caramel chocolate in a bowl over a pot of boiling water
  8. Drizzle on cookies and sprinkle on salt flakes
  9. Set in fridge until chocolate sets
  10. Store in a sealed container
