Salted Peanut + Pecan Popcorn & Granola Bar Recipes

Serves: 6 as a side 
Prep time: 3 minutes
Cooking time: 6 minutes

Ingredients
2 tablespoon extra-virgin olive oil 
½ cup raw corn kernels 
½ cup coconut milk
¼ cup Farmer Jo’s Salted Peanut + Pecan Granola Butter 
¼ cup of honey or rice malt syrup 
Pinch sea salt 

Method 

  1. Add the olive oil and the corn kernels to a large, heavy-bottomed saucepan and cover with a lid. Place over medium heat. After about 30 seconds you’ll hear the kernels start to pop. Every 20 seconds, shake your pot to stop any kernels sticking to the bottom of the pot. Continue until the popping reduces to about a pop every few seconds. Remove pot from the heat and allow to sit for a minute for any last minute kernels to pop in the residual heat. Transfer the popcorn to the largest mixing bowl you have! 
  2. Clean out the saucepan and place over low heat with the coconut milk, Farmer Jo’s Salted Peanut + Pecan Granola Butter, honey or rice malt syrup and the salt. Stir together for 1-2 minutes until smooth. If your granola butter is clumpy, you may need to add a dash more coconut milk and stir for a little while longer to get a smooth finish.
  3. While still warm, pour the mixture over the popcorn and stir until the popcorn is well coated. Serve warm, or place the popcorn into the freezer to cool which also gives the popcorn a bit more of a crunch. 

Notes / Tips: 
Turn into popcorn bars by placing the warm coated popcorn into a small baking tin lined with baking paper. Push the mixture into the tin using the bottom of the granola butter jar, so it’s compacted together. Place into the freezer to set for 1 hour. Remove and slice into squares to serve.
