  • ¼ cup ricotta 
  • 1 cup milk of your choice 
  • 2 free-range eggs 
  • 1 teaspoon vanilla extract 
  • 4 slices stale bread, any type - sourdough, multigrain, rye etc.  
  • Butter, for frying 
  • 1 medium banana, sliced 
  • ½ cup Farmer Jo Burnt Fig + Almond Granola 
  • 2 tablespoons maple syrup 


  1. In a large bowl, whisk together the ricotta, milk, eggs and vanilla. Place two slices of bread into the batter and turn to coat on both sides. 
  2. Heat a knob of butter in a large frying pan over medium heat. Once hot, add in the slices of bread and cook for 2-3 minutes, until golden brown. Flip and repeat on the other side. Set aside and repeat with the remaining slices of bread and more butter. 
  3. Divide the toast between two plates. Top with banana slices, the Farmer Jo Burnt Fig + Almond Granola and drizzle over the maple syrup. 

Notes / Tips: 

You can also make this with any frozen bread straight from the freezer. It will take 4 minutes on each side, until warmed through and golden on the outside.
