Ingredients
- ¼ cup ricotta
- 1 cup milk of your choice
- 2 free-range eggs
- 1 teaspoon vanilla extract
- 4 slices stale bread, any type - sourdough, multigrain, rye etc.
- Butter, for frying
- 1 medium banana, sliced
- ½ cup Farmer Jo Burnt Fig + Almond Granola
- 2 tablespoons maple syrup
Method
- In a large bowl, whisk together the ricotta, milk, eggs and vanilla. Place two slices of bread into the batter and turn to coat on both sides.
- Heat a knob of butter in a large frying pan over medium heat. Once hot, add in the slices of bread and cook for 2-3 minutes, until golden brown. Flip and repeat on the other side. Set aside and repeat with the remaining slices of bread and more butter.
- Divide the toast between two plates. Top with banana slices, the Farmer Jo Burnt Fig + Almond Granola and drizzle over the maple syrup.
Notes / Tips:
You can also make this with any frozen bread straight from the freezer. It will take 4 minutes on each side, until warmed through and golden on the outside.
