Serves 4 people 

Ingredients

  • Butter/ghee/coconut oil for greasing
Filling
  • 5 apples, peeled and chopped
  • Juice of 1 mandarin or orange
  • Zest of 1/2 the mandarin or orange
  • 1/4 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 2 Tbs maple syrup
Crumble
  • 80g cold butter, chopped
  • 80g plain flour
  • 100g Farmer Jo Coconut Porridge with Chia & Maple
  • 2 Tbs rapadura (or any) sugar
  • Vanilla ice cream, to serve

Method

This crumble is so easy and delicious! The Farmer Jo Coconut Porridge with Maple & Oats happens to have the perfect flavour and texture for a crumble, while it making it more wholesome than your usual crumble mixture! I’ve made this recipe to feed 4 since many of us are in iso, but feel free to double if you have a bigger family!

Firstly, preheat your oven to 180 degrees. Grease your baking dish or cast iron pan with butter/ghee or oil. Place all of your filling ingredients in a medium bowl and gently toss so all apples are coated. In another medium bowl, work the butter and flour by rubbing between your fingers until it forms a chunky breadcrumb consistency. Add your Farmer Jo Coconut Porridge and incorporate into this mix. Finally, add 1 tbs of the sugar and mix through. Place your apples in the dish or pan and be sure not to leave any of the juicy liquid behind! Top the apples with your Crumble, sprinkle over the remaining tbs of sugar and then bake in the oven for about 30 minutes or until golden. That’s it! Can you believe it?! Serve warm with vanilla ice cream or whichever cream you love. It’s the perfect Iso dessert really. Yum.
